Every batch we roast gets a page in the roast log. The curve shows bean temperature over time: the drop after charge, the turning point, the long climb, and the moment of first crack — the pop that marks the start of development. Development percentage is the share of the roast after first crack: shorter keeps things bright, longer builds body.
